The chemical formula of baking soda is Sodium bicarbonate (NaHCO3).
It is prepared by the Solvay process in Industries.
The reactants used to produce sodium bicarbonate are concentrated solutions of carbon dioxide, water, ammonia, and brine solution.
Carbon dioxide (CO2) + water (H2O) + ammonia (NH3) + sodium ion (Na+) → sodium hydrogen bicarbonate (NaHCO3) + ammonium cation (NH+4) are obtained.

When baking soda is heated during cooking, decomposition occurs to produce sodium carbonate, and carbon dioxide and water vapor are released.
