- What happens chemically when quicklime is added to water? Write chemical equation of the reaction involved.
- What is Baking Powder? How does it make the cake soft and spongy?
(a) On adding Quick lime (CaO) to water, a large amount of heat is released, with the formation of Ca(OH)2.
The chemical equation of the reaction involved is given below:
$CaO + H_2O → Ca(OH)_2$
(b) Baking powder is a dry chemical leavening agent, a mixture of Sodium bicarbonate (baking soda) and a weak acid, Tartaric acid.
When mixed with water the sodium hydrogen carbonate(baking soda) reacts with tartaric acid, as a result, carbon dioxide gas is liberated. This carbon dioxide is trapped in wet dough and bubbles out slowly making the cake soft and spongy.
