Why starch takes a longer time than maltose to get digested in our body?
Starch is a long chain of glucose that means complex sugar structure, whereas
Maltose is a very short and simple chain of glucose that is made up of only two glucose molecules bound together.
The starch is a more complex form of maltose, that's why the enzyme amylase found in our saliva digests starch by breaking down it into maltose first.
Therefore, starch takes a longer time than maltose to get digested in our body.
