How starch broken down by the salivary amylase gets converted to sugar or maltose?


Starch is broken down into disaccharides (two simple sugars joined together) and trisaccharides (three simple sugars joined together) by the action of salivary amylase. These di and trisachharides are further acted upon by various enzymes to form glucose, a simple sugar molecule.
