(a) When Copper sulphate crystals are heated strongly, it loses its water of crystallisation and the blue colour turns to white.
The reaction is given by:
$CuSO_4.5H_2O → CuSO_4 + 5H_2O$

(b) When water is added to anhydrous copper sulphate, it gets hydrated and turns blue.
The reaction is given by: $CuSO_4 + 5H_2O → CuSO_4.5H_2O$
