Crystallization is better than evaporation for recovering sugar from the sugar solution.
Crystallization is a chemical solid-liquid separation technique in which mass transfer of a solute from the liquid solution to a pure solid crystalline phase occurs.
During evaporation, sugar can get charred on heating. However, in crystallization, no such problem occurs and we can get pure crystals of sugar.
