Why is Turmeric yellow?
Turmeric is an Indian spice that is made by grinding the roots of the Curcuma longa plant. Turmeric has two pigments known as xanthophylls, which gives the yellow color to it, and carotene, which is reddish-orange in color. The fresh rhizome is yellow, red, and orange in color. But after processing such as boiling, peeling, drying, etc it turns to ground turmeric which is yellow in color.
