Why do the bodies of deep-sea fishes burst open while brought to the surface of the sea?


That burst is due to the gasses present inside them. After their death, the gasses accumulate inside them near their belly. So when a small cut is made through the bodies, the gasses come out with much force, which looks like bursting.
