Why digestion of fats are difficult from other food components ?


The digestion of fats is difficult from other food components because they are insoluble in water. Fats are present in the form of large globules which are broken down into smaller droplets by bile juice.

The enzyme lipase breaks down fat into fatty acid and alcohol (glycerol). The glycerol can be absorbed with the help of bile juice. The bile juice forms droplets from fatty acids. These smaller droplets are easily digested by the enzymes released from the pancreas.
