What makes sprouted grains more nutritious?
Sprouts are very nutritious because, they are rich in digestible energy, vitamins, minerals, amino acids, proteins, and phytochemicals, which are necessary for a germinating plant to grow, and these nutrients are also essential to human health.
Because of sprouting, they also get reduced in anti-nutritional compounds in raw legumes, which can be a reason for being more nutritious.
For example- raw lentils contain ‘lectins’, an anti-nutritional protein which is reduced by sprouting or cooking.
The simple process of sprouting carries out many enzymes in germinated seeds, grains, and legumes, which make them easier to digest.
