What is the protein contained in an egg white is known as?
The albumen (the egg white) and the yolk (yellow part of the egg) are the reserve food for the growing embryo till it hatches out in the form of a chick.
Albumen- It is mainly composed of water (about 90%) and the remaining 10%, proteins (including albumins, mucoproteins, and globulins) that support and protect the yolk and provides water and proteins for the growing chick.
There is 13 protein found in the egg white, among them “Ovalbumin (54%)” is the most abundant protein in albumen.
