What is baking powder? How does it make the cake soft and spongy?


Baking powder is a dry chemical leavening agent, a mixture of Sodium bicarbonate and a weak acid, Tartaric acid.
On heating, it releases carbon dioxide which was trapped in the dough. This carbon dioxide bubbles out slowly from the wet dough of the cake, making it soft and spongy.
