How does water prevents the plants from frost and hot air currents?

Plant contains 90% of water which is absorbed by the roots. Minerals and fertilizers are also absorbed from soil along with the water. Because of the high water content plants has good heat-absorbing capacity. Water protects the plant from cold air temperatures. The water freezes on crop and releases heat to provide warm conditions. This protects the crop from freezing temperatures which can cause damage to the crop.  Also, excess water present in plant absorbs hot air currents, that protects the plant from drying or burning.
