Food products containing fats and oils are packaged in nitrogen because nitrogen acts as an antioxidant and prevents food from oxidation and make it rancid.  


(An anti-oxidant is a substance that prevents oxidation. Anti-oxidants are added to fat and oil-containing foods so that they do not get oxidized easily and hence do not turn rancid.)
