Baking powder is the ingredient that causes the cake to rise and become light. The baking powder mixes with water, to form sodium hydrogencarbonate, which reacts with tartaric acid to evolve carbon dioxide gas. This carbon dioxide gets trapped in the wet dough and bubbles out slowly making the cake soft and spongy.
